Eat Dessert and Reap Health Benefits For Breakfast

A healthy dessert-like alternative for breakfastPost-Pandemic and with the mandate to stay home or work from home, you may be scratching your head wondering what to eat for breakfast.  How about a healthy and nutritious parfait?  That is not an oxymoron.  I was in the mood for something different but nevertheless healthy.  I found myself having the desire to prepare a type of crumble like the one you find on top of your favorite cobbler recipe.  In place of regular white flour, I used almond flour, which, by the way, stays fresh longer by storing it in the freezer.  I also wanted some sort of protein, so I experimented by using 1/2 cup of tahini and 1/2 cup cashew butter.  Any nut butter will do.  I added some coconut sugar, some coconut oil and a variety of other things I had on hands such as dried cranberries, chocolate chips, and pecans.

After having mixed everything well, I spread it out on a baking sheet pan lined with parchment paper.  I baked it in a 350-degree oven for about 10-12 minutes.  After letting it cool, it was the perfect crumble.  Now, the question was, How was I going to use it?  I decided to take out some parfait glasses.  I proceeded to fill the parfait glasses 1/4 with fresh fruit salad made the previous day.  I then looked in the fridge and found a jar of plain yogurt.  I added a dollop or two and topped it off with the crumble.  The result was incredible!  Not only did it satisfy a nagging sweet tooth but it also was chock full of wonderfully healthy ingredients.  So, there you have it.   What a great way to start off the day!

For the Crumble:

1/2 cup tahini

1/2 cup peanut or almond or any other nut butter

1 cup almond flour or tiger nut flour

1/4 cup coconut sugar

2 teaspoons baking powder

1/3 cup dried cranberries

1/3 cup chocolate chips

1/4 cup pecans

Pinch sea salt

2-3 tablespoons coconut oil

Procedure:

Preheat the oven to 350 degrees F.  Line a baking sheet with parchment paper.

Assemble all the ingredients.  In a medium mixing bowl, mix the above ingredients together until they come together.

Roll some dough in your hand to form a ball.  Spread it out on the sheet pan.  Continue doing this until all the dough has been used.

Bake in the oven for about 10-12 minutes.  Take out and let cool.  When cool, crumble them and place the crumble in an air-tight jar.
